Bison Burger

Ingredients
  

  • ¼ c wild rice uncooked
  • 8 oz mushrooms wild preferred, finely chopped
  • 1 tbs unsalted butter
  • c yellow onion minced
  • 1 clove garlic minced
  • 1 lb ground bison
  • salt and pepper
  • 1 tsp oil
  • bacon optional
  • buns
  • preferred fixings

Instructions
 

  • Add rice and ¾ cup water in a small saucepan until it boils. Turn down heat, cover and simmer until rice is tender. Once cooked, strain any remaining water off, transfer to a large bowl to cool.
  • While the rice is cooling, heat your griddle or pan and melt the butter. Add the mushrooms and sauté until fully cooked and wilted. Add salt to taste at the end. Add to the bowl of rice.
  • To the rice mixture, add the onions, garlic, bison, salt and pepper. Mix with your hands until incorporated. Form into 4-6 patties. Add oil to pan or griddle and cook the burgers until done.
  • Assemble the burgers on buns with desired fixings and enjoy.
  • Side dishes can include salad, coleslaw, baked beans, homemade fries, etc.
